  • 250 g Flour gluten free substitutes can be used
  • 1/4 tsp salt
  • 1/2 tsp Bicarb of Soda
  • 200 g Brown Sugar Coconut sugar works fine too
  • 100 g Castor Sugar regular white sugar works fine too
  • 1 egg
  • 1 egg yolk save the egg whites to make meringues
  • 200 g chopped dark chocolate or any other chocolate you prefer
  • 100 g mixed nuts of your choice a good handful of what ever nuts you prefer, leave them out and add more chocolate if you prefer
  • 175 g butter Canna Butter works well here.
  • Dash vanilla essence make your own by steeping a vanilla pod in whiskey


  • preheat oven to 170 C
  • cream butter and sugar together
  • add egg +egg yolk and beat until combind
  • add salt and bicarb and mix through
  • add flour gradually until well combined and mixture is no longer sticky
  • fold in chocolate and nuts
  • shape into a ball, flour slightly if still sticky and cover and let rest in fridge for 10 minutes
  • divide and shape into balls, place on greased and floured baking tray ( if not nonstick)
  • Gently press balls with back of fork to flatten slightly , make sure not to force them flat as they may stick while cooking
  • put into oven and monitor , they are ready once they turn light brown. cook to taste
  • remove and let cool on wire rack
  • enjoy
